The unmistakable delights of Kenyan coffee shine in this lot from the Gatomboya Factory in Nyeri, a region known for its rich volcanic soil and rainfall. Gatomboya is run by the Barichu Farmers Society, a cooperative of over 600 members, and is known for its meticulous attention to detail when selecting and processing coffee cherry. 

At intake, coffee is sorted and inspected by the Cherry Clerk, then pulped and fermented for 16 to 24 hours. Coffee is then washed for 8 to 12 hours and dried on parchment in the sun for 21 days. The exceptional “SL” cultivars were developed by Scott Agricultural Laboratories in the 1930’s that thrive in Kenya due to their ability to soak up the rich terroir through deep root structures. They are the go-to trees for smallholders because they are easy to maintain and can be grown sustainably.

AA grade beans are large dense, measuring 7.2 millimeters. The final product is tart and bright like pomegranate and plum, sweet and heavy like molasses. It cools to hibiscus.
