It’s always exciting to have a Chiroso and Jhon Didier Trujillo’s famous lots deserve every bit of hype. Caturra Chiroso’s (or simply “Chiroso”) were discovered in Colombia in the early 2000’s and have since been linked to trees of Ethiopian heritage. The consistent high quality of Ethiopian varietals presents an exciting opportunity for cultivation and Trujillo is leading the way at Villa Flora.

Trujillo is an innovative grower who has devoted his life to sustainable agriculture. His farm, Villa Flora, is dedicated to Chiroso cultivation and also grows lulo, plantains, and avocado. Monday through Friday he selects and immediately depulps Chiroso batches, or “cochadas,” fermenting the beans in mucilage with water. On Friday’s he processes the bigger lots and dries them on sheltered raised beds, or “marquesinas,” for approximately two weeks. Trujillo brings a commitment to quality to everything he does; he is passionate about environmental and economic sustainability and uplifting other coffee producers in his community.

The final cup has sweetness and flavor like tamarind and baking spices. It sparkles with oxalic acidity blended with a creamy mouthfeel
