Burundi Coffee: Burundi is a small landlocked East African nation on the edge of the Great Rift Valley boasting lush volcanic highlands climbing from the shores of the African Great Lake Tanganyika. These dramatic geographical features promote high levels of precipitation, and combined with the volcano-enriched soils, create ideal conditions for high-quality coffee cultivation. Producers in Burundi plant primarily the Red Bourbon varietal, which is known for rich creamy body and chocolate flavors. Coffee grown here also frequently displays sweet floral aromatics, like jasmine and honeysuckle. Farms are small and family-owned, organized into units that locals refer to as Hills. Coffee is harvested when ripe, and delivered to the local Washing Station where it's sold for processing and combined with coffee harvested from neighboring hills, and eventually purchased for export.

Washed Coffee: The washed process is the standard, method of perparing coffee before roasting. It results in high-clarity, delicate flavors. The processbegins with mechanically depulping the coffee cherry, followed by repeated washing with clean water to ensure the complete removal of the fruit mucilage. The coffee is then fermented for a short period of time to remove the parchment layer, and then dried in the a single layer either in the sun or in shade for several days
