Colombian coffee producers are incredibly innovative. In response to decades devastating coffee rust disease, they developed high quality disease resistant varietals like Colombia and Castillo. As the specialty coffee industry has evolved, they've been
at the forefront inventing delicious new techniques for fermenting coffee, vastly expanding the range of flavors possible in the cup. Coffee from Colombia can't be easily generalized, but it's particularly famous for malic acidity (think apple & pear), big sweetness, and delicate florals on the aroma.
The oldest method of processing coffee. The coffee cherries are dried in the sun with skin and mucilage intact before de-pulping, leading to significant changes in flavor, sweetness, and acidity. The process is overall simpler than washed, but to produce high quality natural coffees a lot of monitoring and care is necessary, requiring the constant removal of individual cherries that begin to rot or over-ferment. The final product is very sweet, and presents distinctive winey flavors and red fruit acidity.
