Our latest batch offering features a washed Caturra & Colombia community lot from La Banda Rebelde, a coffee collective led by Didier Javier Pajoy with coffee from a total of five local producers. La Banda Rebelde has consciously chosen to avoid chemically intensive farming methods, opting instead for practices that promote longer-lasting, healthier soil, thereby benefiting the wider community. In reciprocation, Shared Source has facilitated the importation of their coffee and extended interest-free loans, enabling them to afford higher wages for pickers and foster community growth. They employ a brix meter to selectively pick ripe cherries, which are then subjected to a 12-hour overnight fermentation process. Subsequently, the cherries undergo depulping and are fermented once more in sealed plastic barrels in a low-oxygen environment for a duration of between 36 to 40 hours.
