Acidity like ripe yellow peach. As it cools, flavors of strawberry join with the florality of lime. Full-bodied with a lasting finish.

Additional Information:

This beautiful coffee is from El Diviso farms in Huila, produced by Nestor Lasso, brother of Adrian Lasso whom we've purchased amazing coffee from previously. The Chiroso variety is a mutation of caturra with a profile very similar to Ethiopian coffees - think citrus and yellow fruits along with a velvety texture. This particular lot went through a 48-hour oxidation to reach of pH of 4.5. The cherries were then floated in cold water to remove impurities and then washed with 50C water (thermal shock) and placed in sealed containers with beer yeast for an 80 hour anaerobic fermentation. The fermented cherries are transferred a mechanical dryer to dehydrate for 12 days, followed by a parabolic drying system for 15 days.
