Phuji Phantasy is an anaerobic natural Sidra grown by Elias and Shady Bayter of El Vergel Estate (Tolimo, Columbia.) The Bayters have been innovating natural coffee processing since they modernized their prestigious farm in 2018. They enjoy growing rare cultivars including Gesha, Laurina, and Sidra varietals. This strikingly flavorful Sidra was processed using a solution of mosto, the liquid produced during the fermentation of ripe coffee cherries. The cherries in this particular lot were fermented for 72 hours in plastic barrels with mosto, dried mechanically for 2-4 subsequent days, then sun-dried for 18 days. The name Phuji Phantasy celebrates the coffee’s delicate aromatics and delicious acidity of apple and ripe pear.
