Elias and Shady Bayter of El Vergel Estate have been on the forefront of unique naturally processed coffee methods since they began. This bold flavored Sidra is a testament to their hard work detail and fastidious attention to detail. In this coffee they've employed a microbial solution of yeast and bacteria called Mosto which produces a complex flavor profile when allowed to undergo a controlled fermentation. Mosto is produced from fermented coffee cherries that are first dehydrated, which helps better concentrate flavors. For this lot, the cherries are fermented for 72 hours in plastic barrels along with Mosto. They then go through a 2-day drying process - first mechanical drying for 2-4 days, and then 18 days of sun drying.
